Weekly Meal Plan 1/25/26

We’re in the middle of an ice storm here in SC, which for us means to shelter in place and prepare for power outages. But, we still gotta eat! So this week’s meal plan includes a lot of pantry and freezer staples, since I didn’t stock up much on fresh items.

Monday – Turkey (or Chicken) Noodle Soup – no recipe here because it’s pretty easy. This week, I’m busting out my frozen Thanksgiving turkey carcass + wings. Put your choice of carcass in a pot covered with water with some large chunks of onion, carrot, and celery. Add a splash of apple cider vinegar. Bring it to a boil, then let it simmer for as long as you like. Strain, pick out the meat, and discard the aromatics. Add back in the meat, fresh diced carrots, onion, and celery, and salt to taste. Before you’re ready to serve, add egg noodles to the soup and let them cook through. You could also sub cooked rice for the pasta (cook separately).

Tuesday – Taco Pasta – I’ve made this 43 times, it’s so easy and makes great leftovers. I like the Barilla Protein pasta, and you can sub bone broth for the water for more protein (check salt level before seasoning).

Wednesday – Tomato Soup And Grilled Cheese – I won’t be making the soup (see: ice storm), but I have included the recipe for one we like.

Thursday – Leftovers/ Fridge Clean out

Friday – Teriyaki Chicken Poke Bowls – I’m using pre-cooked meatballs I have on hand for this, I’ll just brown them in a pan and add the glaze.
