February is both the shortest and the longest month, and I will die on this hill. It’s literally the month that never ends. I think partly because people are ready for Spring, and the anticipation makes it feel longer. But also, it’s just a really transitional month. You’re coming off the holiday train, New Years resolutions, and getting back into the swing of a routine. Add in weather that’s 70 and sunny but turns into 40s and rainy within 24 hours, and that’s sure to rock your brain a bit. But here we are in the last week (which may or may not feel like 3 weeks). So let’s get this done.
Monday – Sheet Pan Chicken Pitas
Tuesday – Black Bean Baked Tacos
Wednesday – Orzo, Leek, and Dill Soup – the recipe has a typo for the amount of orzo used. I use 1.5cup dry.
Thursday – Leftovers
Friday – Steak Fajita Salad – I’ve made this before, and it’s sooo good – do not skip the homemade dressing
Saturday – Takeout
Sunday – Fridge Clean out!
