Weekly Meal Plan 4/12/26

This past week my son was on Spring Break from school, and we decided to do a little overnight trip to a small establishment you may have heard of called Great Wolf Lodge. I think they have these things all over, but I had never been before. It was quite the experience. It’s basically like a kid’s cruise but you’re on land, and it feels like a casino inside. And you can only lose money. Nevertheless, my son rated it a 10/10. If you like your nervous system, avoid at all costs.

Along with my shot nervous system is the budget this week, as I have used up quite a bit of my pantry items. So, we’re replenishing and cooking up some new meals this week!

Monday – Sour Cream Beef Noodle Casserole – this looks like basically a higher protein and slightly leaner version of lasagna

Tuesday – Dumpling Smash Tacos

Wednesday – Leftovers

Thursday – Salisbury Steak with Crispy Potatoes – Ok, I’ve actually never made Salisbury Steaks before but it felt nostalgic. Because these are cooked in a creamy sauce, I’ll roast some potatoes to serve alongside.

Friday – Corn and Chickpea Fritters with a salad

Saturday – Out to eat!

Sunday – Fridge clean out
