Weekly Meal Plan 2/1/26

Well we are having quite the snowy few weeks here…just when the ice from last time mostly melted we got a fresh blanket of 4″ of snow. So we’re still keeping it pretty simple for meals this week, planning for no school for a few days, and just surviving the boredom. I did a shop on Friday for a few things, but I’m relying heavily on pantry staples, spices, and my freezer stash. Here’s what we got cookin’:

Monday – Sheet Pan Kielbasa – This doesn’t really necessitate a recipe, but this is the general idea. We are using turkey smoked sausage, potatoes, peppers, onions, and broccoli. I typically season with just olive oil, salt, pepper, garlic, and onion powder.

Tuesday – Pork Chops, Mashed Potatoes, and a Bagged Salad – I’m not too experienced with pork chops, but they were BOGO at Publix so…why not? I’ve got yukon gold potatoes which I’ll peel, chop, and boil until soft. I usually hand mash while leaving some texture then add butter, milk/cream, and salt to taste.

Wednesday – Leftovers

Thursday – Peanut Noodles – I’m using frozen shredded chicken that I stored from a few weeks ago, just letting it warm through in the sauce. After checking the pantry for some linguini, I realized I only have rice Pad Thai noodles on hand – probably a better choice anyway!

Friday – Pizza Night

Saturday – Curry Chick Peas – A great mostly pantry or freezer meal, you can use frozen greens or leave them out if you don’t have any. I find that keeping a good stock of canned beans, tomato products, rice, and coconut milk can get you pretty far with a decent meal that’s cost effective.

Sunday – Fridge Clean Out (YOYO)
