Weekly Meal Plan 2/8/26

Another week, another meal plan! Did you ever think so much of your adult life would be consumed with constantly thinking about food, what to cook, making shopping lists, and then actually cooking? I definitely did not. It seems like something I should have been warned about. And I actually like cooking, usually. I can’t imagine if I saw it purely as a chore. In any case, if you’re looking for inspiration this week, I’ve got you covered. We are having family in town toward the end of the week, so I’m making sure to clean out the fridge of earlier meals and then making something that I know freezes well.

Monday – Firecracker Meatballs

Tuesday – Loaded Burger Bowls – You can use frozen fries or diced breakfast potatoes if you don’t want to make your own! The secret to these in my opinion is using both dill and bread & butter pickles!

Wednesday – Grinder Chicken Salad (wraps or over lettuce) – I cook up some chicken breasts in chicken broth in the Instant Pot then shred, but you can use rotisserie or even canned chicken (just adjust salt levels, as canned chunk chicken usually is more salty). We use chopped deli ham and turkey pepperoni in this recipe. You could leave out the feta honestly (I think it’s plenty cheesy with the provolone and parmesan), but it does add a creamy saltiness!

Thursday – Leftovers

Friday – Slow Cooker Coconut Lime Chicken

Saturday – Out to eat
