It’s another week, another meal plan. Repeat after me: meal planning will save me time and money this week. I know it’s hard to plan, but it’s better than being stressed out at 6pm with nothing in the fridge and having to order takeout. This week we’re going to mix it up a bit, trying some new recipes but also focusing on using up some pantry ingredients I have from last week, like russet potatoes, a lot of lemons, and rice/pasta.
Monday – Sloppy Joes Stuffed Potatoes – I’ll use russets instead of sweet potatoes and top with some cheese and chopped pickles!
Tuesday – Chicken Caesar Smash Tacos (just trust!) – to make these super easy and fast, use a bagged Caesar salad kit! –
Wednesday – Leftovers
Thursday – Greek Meatballs in Lemon Sauce (I’ll serve over rice with green beans on the side)
Friday – Homemade pizza night (I love using yogurt dough for this)
Saturday – Green Olive Linguine – this feels fancy, but approachable. I’ll probably just use broccoli instead of broccolini.
Sunday – Fridge Clean out! Everything’s gotta go, or get frozen.
