Weekly Meal Plan 3/29/26

We’re heading into April, and it’s about this time of year where I feel time really accelerating. Maybe because as a parent, your life revolves around the school year, and it seems like once we hit April that Summer is imminent. The time jump from Spring Break to Summer Break will give you whiplash. And yet, there’s no rest for the weary. We must press on with meals daily. I must say that even as someone who loves food and enjoys cooking, the adult responsibility of this task can really kill the vibe. I remember when I was younger and would just troll around the grocery store casually, finding joy in looking down every aisle and getting inspired. It wasn’t long after I had my son that the weekly grocery trip became more of a burden than anything else. Now, nearly 9 years in, I’m starting to find joy in it again. But some weeks are harder than others.

The weather is having more mood swings than my perimenopausal self, so I felt drawn to more cozy dishes this week (even though it will probably be 85 degrees while I’m slurping my soup on Thursday). Here’s what I came up with:

Monday – Cacio e Pepe – I’ve actually never made this delightfully simple pasta dish, but I’m looking forward to it.

Tuesday – Meatloaf and Sauteed Green Beans/Roasted Potatoes

Wednesday – Leftovers

Thursday – Creamy Mushroom And Pearled Couscous Soup

Saturday – Pork Chops and Gravy – I’m going to try to thaw some sweet potato casserole from Thanksgiving to serve with it (will it be good?), but you could serve any potato variety/preparation, rice, or even a side of pasta.

Friday – Chimichurri Chicken Thighs and Cilantro Lime Rice

Sunday – Fridge Clean Out
