Weekly Meal Plan 3/8/2026

Have you noticed that March is already going by faster than 28 days of February? Fortunately, that means more sun and better weather are on the way. I can already feel the shift away from soups and stews to wanting more fresh, crunchy foods. But, I recently learned that in Chinese medicine, we need warming/wet foods year round for proper health. As someone who struggles with drinking enough water on the daily, keeping some brothy foods in my diet does seem to help. So, I’m going to resist the urge to go full salad mode and maintain some saucy dishes heading into warmer weather. We’ve got this, gang!

Monday – Coconut Brothy Chicken w/Jasmine Rice – I think this could be done in the crockpot sans rice (cook separately)

Tuesday – Beef Shawarma Bowls

Wednesday – Roasted Veggie Orzo – easy to customize to what veggies you like! I’ll be doing sweet potato, carrot, zucchini, onion, and brussels. Not nuts, no dried fruit.

Thursday – Leftovers

Friday – Loaded Baked Potatoes – You can really do these any way you like, but this version looked good if you need an idea. My plan is to use the frozen crispy chicken (Bare) I have tossed with some BBQ sauce, keeping it simple with just a cheesy potato base. I’ll roast some broccoli on the side.

Saturday – Out to eat (I’m going to a play!)

Sunday – Mediterranean Tuna Salad (this one also looks good)
